Acclaimed chef Igor Macchia returns to Cucina for a limited four-course menu!

Calling all foodies and fine-dining lovers! Igor Macchia, the acclaimed Michelin-starred chef from Piedmont, is returning to Cucina for a limited time only, from 29 November till 3 December, to present a special menu! Read on to find out more about his upcoming appearance at Cucina.

A well-known culinary expert with an impressive background, Macchia began his culinary journey at a young age and has worked at renowned restaurants including Le Lion d’Or, Le Gavroche, and Bruneau. He opened La Credenza in Italy in 2005, which earned its first Michelin star the following year. Macchia’s love of travel and Asian countries like Japan, Thailand, and Taiwan has inspired his signature blend of Piedmontese cuisine with vibrant Asian flavours, which he is poised to bring to the tables of Cucina later this month.

Macchia’s special four-course tasting menu starts with a tender and buttery Belgian chicory tarte tatin, featuring chestnuts, honey, buffalo milk cream, and truffle caviar. Coming next, the oyster risotto with soya sauce gelatine is your ticket to an oceanic paradise—the risotto, infused with seaweed stock and blended oysters, has an Asian twist to it in the form of soya sauce gelatine cubes, adding an unexpected textural dimension to the dish. Resurfacing from this voyage under the sea, the Turet is served—a Piedmont recipe made with beef cheek, polenta, and stewed onions cooked in cider. Thanks to Macchia’s innovative creativity, the slow-cooked, bull-shaped beef cheek melts in your mouth, together with the onions and the creamy polenta. Dessert is the Gianduj’8, a harmonious marriage between vanilla sponge and hazelnut chocolate mousse. This blend of milk, dark, hazelnut, and lime chocolate is highlighted by acidic winter cherries.

On opening night, chef Igor Macchia’s four-course dinner will include a special wine pairing featuring exemplary wines from renowned Italian winery Poderi e Cantine Oddero, carefully handpicked by Oddero Wine owner, Pietro Viglino Oddero. The wine pairing menu is available on 29 November only.
