New Bars: Where to drink in Hong Kong this December

December is finally here, and that means we are officially in Christmas season! This month, we are on the lookout for cosy bars and re-vamps of classic festive drinks. Check out some of the most exciting new bars and cocktail menus to be found in Hong Kong this December.

Hong Kong is a unique city where the sea runs in, out, and in-between, and there’s just something about being by the water that recharges our batteries and soothes our soul. That said, what could be better than having front-and-centre seats at one of the world’s most famous harbourfronts? Throw a new drinking spot into it! As one of the newest dining ventures at the Hong Kong Museum of Art, Ink captivates diners with ingredient-driven cuisine and a laid-back seaside vibes in the heart of Tsim Sha Tsui’s promenade, a short stroll from the iconic Avenue of Stars. There are craft brews from Gweilo Beer, a wine selection, artisanal sodas from New Zealand, and housemade ice cream!

Absolut Extrakt at Solas Lounge

Coming all the way from Sweden, Absolut is taking vodka to new heights! Combining their signature vodka with the spiced flavours of green cardamom, their new spirit Absolut Extrakt has an alcohol content of 35 percent and offers a unique taste profile that is best enjoyed in chilled shots. To celebrate the launch of this novel product, Absolut Extrakt will be holding a pop-up event at Solas starting from December 5–11 from 3pm until late. Kicking off with the Extrakt Ordinary Night, there will be complimentary shots for all guests and cocktails starting from $50.

Aqua's Moonlight Jasmine

New Tanqueray gin cocktails at Aqua Spirit

To commemorate the launch of two new flavours of Tanqueray Gin, Rangpur and Malacca, aqua spirit presents four new cocktails made with fresh, hand-picked ‘homegrown’ herbs, many of which have never been tasted before in Hong Kong. In particular, Moonlight Jasmine ($128) is a playful gin twist on a white Negroni inspired by Japan; Seedlip Garden provides an earthy spice compliment for Tanqueray Rangpur, and sweet Japanese umeshu plum wine is then added to create a fresh and floral concoction. The perfect pairing with this refreshing cocktail is the colourful vegetarian Lotus Wood, Avocado & Fig Sushi with Homegrown Mitsuba ($298).

Mezcal Toddy at Terrible Baby

Hot toddy reinvented at Terrible Baby

Everyone’s favourite night-time destination, Terrible Baby, livens up this year’s Christmas celebrations with a deliciously daring Mezcal Toddy ($98). With Los Javis Espadín mezcal and Rebel Yell bourbon, the drink is a spin-off of a classic hot toddy, infused with heart-healthy ingredients like beetroot and hibiscus, giving it its beautifully vibrant colour. Its creator, Mexico-native Edgar Santillan, completes the warming cocktail with a touch of lemon, cloves, and cinnamon, keeping with the spirit of the season.

You may know of ORIGIN by their signature bathtub cocktail that has graced our Instagram feeds more often than we can count, and you can bet the team is leveraging on their Instagrammable edge with a selection of new winter cocktails. We can’t wait to try WTF “What, ToFu?” ($128), made with tofu-redistilled Tanqueray gin, Jägermeister, black sugar nectar, egg white, ginger juice, and Angostura aromatic bitters, topped with tofu foam and yellow sugar. That will surely get us in winter spirits!

We sure couldn’t go through our list of drinks for December without referencing the ultimate Christmas drink: mulled wine! Maximal Concepts will be offering this delicious bevvy at four of their dining ventures—Stockton, Brickhouse, Mercedes me and Sip Song—all priced at $70. Each restaurant will be presenting the wine with its own unique twist that will resonate with their respective restaurant concepts and cuisines. There is never too much Christmas!

Beloved Italian-American osteria Posto Pubblico puts together a delicious Cranberry Old Fashioned ($109) encouraging all to drink and be merry this Christmas. Marrying the season’s signature berry—cranberry—with aromatic rosemary sugar, this crafty cocktail is complete with bitters and a generous splash of bourbon, promising warm and fuzzy feels this winter. We won’t be needing a fireplace to snuggle up next to after this!

Middle Eastern meets Christmas at Bedu

Using fresh and seasonal ingredients and Middle Eastern spices, Executive Chef Corey Riches is bringing starry night Bedouin feasts to holiday-spirited diners. The Ho-ho-holy Treat ($100) brings seasonal citrus flavours to the meal with Arak and blood orange Cointreau. The cocktail’s red and orange colours come from fresh grapefruit juice mixed with a dash of red wine and Christmas caramel, shaken with egg white for a snowy white finish. Wonder what Christmas caramel tastes like?
