Disciples Escoffier Asia, the first East meets West and Flying Pigs event will be held at Central’s Wild Grass restaurant on Wednesday, November 20th. The
Flying Visits initiative is spearheaded by
Dingley Dell - a sustainable pig farm in the Debden Valley, England, that maintains the best tasting pork comes from happy pigs.
As Flying Visits spread their wings overseas for the first time, Hong Kong’s responsible foodies will be treated to an evening exploring all elements of pork, from the pig farm to the plate. Dingley Dell co-founder Mark Hayward will first take diners on an introductory video tour of his Epping Forest farm, before master butcher Kevin Burrows leads a live demonstration.

FINDS, Jean Paul Gauci of Wild Grass, Jeremy Biasiol of Mirror Restaurant and Guillaume Galliot of
Tasting Room Macau.
The entire porky experience is priced HK$820 for four courses, or HK$1,230 for the menu paired with La Truffiere wine from Perfect Vintage. A proportion of the funds will be going to the
World Wildlife Fund Hong Kong, so you can consume and conserve at the same time!
