10 Coolest Summer Cocktails

Summer is here, and once again the sweltering heat is upon us. But fear not, because we've searched the city's coolest bars to find you the most refreshing cocktails to help you drop a few degrees. From ice cream treats and glowing gin slushies, to smoking tiki tumblers and Mai Tais with a twist, there's a tipple to suit all taste buds and a setting to suit every mood. Bottoms up! My Neighbour To-Taro at The Envoy

It's summer, it's hot, and that means one thing - ice cream time! Rekindle the joy of childhood memories - only this time with a little kick - as you delve into this delicious new Myers’s dark rum delight, which blends homemade taro puree with coconut milk, fresh milk, and simple syrup and coffee. We're not sure what's more fun, getting slightly light-headed from an ice cream, or trying not to get foam face as you sip this summery goodness. The ultimate summer cocktail - and an absolute must! Barong Zombie at Potato Head

New bar on the block Potato Head is whipping up a storm in a tiki glass with this smoking delight. The Barong Zombie couldn't be more tropical if it tried, mixing Nusa Cána and Myer's rum with pineapple infused arak, orange curacao, cherry liquer, pink grapefruit, cane and pineapple juice, bar-made passion fruit syrup, a dash of bitters, and splash of absinthe - complete with smoking cinnamon stick. Be warned though, it doesn't come cheap, and with the menu stating "Only 2 allowed per visit" under this particular tipple, it's just as well at $160 a pop! Les Heisenberg at The Pontiac

If you spot us in The Pontiac, we'll most likely have one of these in hand. We give this icy delight a "glowing" review for originality and flavour. Les Heisenberg mixes Aviation Gin with Blue Curaçao, Bianco Vermouth, Absinthe, and lemon juice, complete with the classic tropical umbrella. Both cooling and delicious, this aniseed-y treat is the ideal way to refresh yourself on those balmy summer nights. Charred Coconut Pina Colada at Limewood

Forget the rain - but take the Pina Colada! Sometimes you just can't beat a classic, and this rustic cocktail will whisk you away to a tropical paradise where the Repulse Bay waves are rolling and the rum is flowing. Quench your thirst and relax by the beach as you sip on this tantilising new potion of Jamaican coconut rum, fresh pineapple, falerum, and nutmeg. Pure bliss!

Golden Pineapple at Café Grey Deluxe

Keep it tutti frutti with this lusciously lavish concoction of Absolut Elyx vodka, Havana Club rum, pineapple juice, orgeat syrup, and rhubarb bitters. You'll feel like absolute royalty as you sip from this beautiful golden pineapple and marvel at the panoramic view of our bustling city. Paradise! When it comes to cocktails, sometimes simple does the trick, but don't let looks deceive you - this summery concoction is anything but plain. This fruity delight is an absolute winner for those with a sweet tooth - and a love of gin. Mixing London Dry Gin, with fresh lemon juice, fresh raspberry, simple syrup, and egg white (for that frothy top), this tipple is bursting with all the sweet goodness of summer. Cucumber Gimlet at The Woods

Stay cool as a cucumber in the sweltering summer heat with this deliciously refreshing tipple at The Woods. Two sips of this beautiful blend of lemongrass gin, celery juice, elderflower syrup, lemon juice, mint, and fresh cucumber, and you'll be left 100 degrees cooler - and with fresh breath. So much more fun than your standard gin and tonic, the Cucumber Gimlet offers a citrusy kick and is carbonated to add a little fizz. Don't forget to eat the edible violets when you're done. Melon-ade at Common Room

What could be better than sipping on a delicious summer cocktail while getting part of your five a day? Common Room has come up with two deliciously flamboyant fruity delights served in whole fresh young coconuts and watermelons, and the Melon-ade is a winner. Made with vodka, lemon juice, fresh watermelon juice, and syrup, this tutti frutti tipple is as tasty as it is colourful - and that's pretty vibrant! Trader Vic and Don The Beachcomber at Honi Honi

You can always count on our favourite Tiki bar to whip up some rum-tastic delights in time for summer. With International Mai Tai Day falling on June 30, Honi Honi have added not one, but two, delicious new Mai Tai cocktails to their menu. As the Mai Tai's original recipe is not 100 percent known and is widely debated, the cheeky mixologists are putting their own spin on the classic tipple. Will you opt for the Trader Vic, which blends Angostura 3yo Rum, J.M. White Rhum, Grand Marnier, lime juice, Angostura bitters and orgeat syrup? Or will you step it up a notch and go for the Don The Beachcomber which adds a dash of Absinthe into the mix of Flor de Caña 4yo Extra Dry Rum, Myers Dark Rum, sugarcane sugar, Homemade Falernum liqueur, Angostura bitters, and lime juice? If you're anything like us, you won't be able to decide and will end up ordering both, but be warned - they’re devilishly moreish!
